Valentine's Day Salted Caramel Pancakes | Recipe

Hello darlings, I just love valentines day and I also love pancake day so I thought not combine the idea of both of them together? I love Valentine's day because I just love having a love filled-day with my partner, I know that sounds cheesy but I just love it that way. I also love pancakes, well because whats not to love about delicious pancakes? They are very versatile to make and you make them with a variety of fillings, toppings and sauces. I made the recipe below inspired by Gizzi Erskine salted caramel pancakes with my own personal twist of course.

I like making pancakes no matter the time of year but with shrove, Tuesday coming up on the 13th and Valentine's day on Wednesday I thought let us make some love heart-shaped pancakes? I usually put chocolate or lotus spread on my homemade pancakes but we decided to have a change this year with making something I haven't made before but have always wanted to make; salted caramel. 

Once I made the salted caramel I instantly knew why so many people loved the taste, salted caramel is the perfect balance between sweet and salted and on top of the pancakes it tastes perfect especially when they are both warm.

 The pancakes I made started off round but for the fun of it, we decided to have a little fun and use our cookie heart cutters and cut out heart shaped pancakes which look so adorable. If you leave them around you would get more pancakes but we got 7 heart shaped pancakes but if left round they would probably make between 8-10. With the leftover pancake we just dipped them into the caramel sauce and omg it was delicious.

 I usually use sugar and butter in my pancake recipe but thanks to the kind people at The Groovy Food Company who sent me out their organic extra virgin coconut oil and their organic coconut sugar, I decided to make it with them instead and honestly I much prefer the taste of the coconut oil and sugar and if you ever make this recipe you will see why.
 Salted Caramel Pancakes Recipe 
I use cups instead of my scales as I find it much easier.

Prep: 10 mins | Cook time: 25 mins | Total Time: 35

Ingredients for pancakes 

  •  1 Cup of Milk ( I use free-range organic milk, you can also use plant-based milk such as soya or oat. 
  • 1 Free Range Egg
  • 2 tbsp The Groovy Food  organic Virgin Coconut Oil
  • 1 cup of self-raising flour
  • 1 tsp baking powder 
  • 2 tbsp The Groovy Food Organic Coconut Sugar 
  • Sprinkle of salt
Ingredients for salted caramel 
  • 200g The Groovy Food Company Organic Coconut Sugar 
  • 30ml of water 
  • Roughly 120 of condensed milk ( I used a squeeze bottle and gave it about 4 big squeezes)
  • 70g of The Groovy Food Company organic Virgin Coconut Oil.
  • Half tsp of salt 

Method for pancakes
  1. Put self-raising flour, salt and sugar into a mixing bowl.
  2. Gradually whisk in the egg-milk and coconut oil until the mixture is smooth, if you want pink pancakes like mine, add pink food colouring. 
  3. Heat a frying pan with a little bit of coconut oil on medium heat, make sure pan is hot before putting any pancakes in.
  4. Use an ice-cream scoop to pour in 2 scoops of pancake mix into the pan ( usually gets the right amount each time) smooth a little with the back of a spoon. Fry them till golden brown on each side which is usually just over a minute on each side. 
  5. Once cooked slide them onto a plate and continue the process with the rest of the mixture.
Method for salted caramel 
  1. I combined all the ingredients into a bowl and mixed them into a thick syrup
  2. I poured the mixture into a small pan on low heat
  3. After a few minutes, it all melted 
  4. I took 2 tsp and drizzled it onto the pancakes
  5. I poured the rest into a jar for later use.
