Vegan Banana Bread Recipe

Vegan Banana Bread

Ingredients

  • 1 and a half a cup of Plain Flour
  • 2 teaspoons of Baking Powder
  • 1 quarter Cup of Demerara sugar
  • half a teaspoon of Baking Soda
  • Icing Sugar
  • a Pinch of Salt
  • 3 Teaspoons of Coconut Oil
  • 1 Teaspoon of Cinnamon 
  • 1 Teaspoon of Vanilla Extract
  • 5 Roughly Chopped dates ( remove the stones)
  • 2 Very Ripe Bananas

1. Preheat your oven, i put mine at 200*
2. Put in a bowl the Flour,Baking Powder,Salt and Baking soda after this put the roughly chopped dates.
3. In a Separate bowl add coconut oil and 2 bananas and mash both together with the demerara sugar.
4. Combine both ingredients together in one bowl and mix together till its like a consistency of a dough. If still a bit dry you can add teaspoons of water.
5. Put mixture into loaf tin. (i personally did not need any oil or butter on the tin)
6. Your banana and date bread should be ready between 30-35 minutes, it should have a nice golden colour to it and firm so you could test this with a spoon.
7. Take out oven and wait to cool , i added a bit of basic icing sugar on the top of this
